Chunky Vegetable Soup! (Retro Post)

Hi lovelies,

I know to some, it might seem "stupid" to have a recipe for vegetable soup but honestly when I went back to home-cooking I found it difficult to find a soup recipe that was what I wanted. 

I love my veg chunky, and with lentils (but not too much) and I really couldn't find a recipe that included both. So with a combination of different recipes and trial and error I found the perfect chunky soup!


The best thing is about soup is that basically anything can be put in it. This recipe is extremely flexible in terms of what vegetables you can use and you can change the amount of lentils by more or less depending how thick you would like it (the more lentils you use the thicker it is). Also, you can blend the recipe when you're done if you like your soup that way!

This recipe makes 4 large portions.

Ingredients 

3 carrots 
2 parsnips 
3 celery sticks
1 large leek or large white onion
1/4 cup of red lentils
4 vegetable stock cubes (you can use less/more and any kind depending on your taste)
Seasoning - I use celery salt!

1. Pop stock cubes in a large pan, fill with boiling water 
2. Chop all the veg and drop it in the pan as you go. 
3. Pour in lentils.
4. Stir thoroughly.
5. Bring to a rolling boil, I tend to keep it boiling until the lentils are swollen and blanched. Its important to keep stirring as lentils burn/stick easily. 
6. Turn down to a simmer for a hour, occasionally stirring through. 
7. Add seasoning and serve!
